The festivities begin with a Prosperity Toss Salad, traditionally eaten whilst standing and tossed with chopsticks, with the higher the toss indicating the better the luck that person will have in the New Year. A selection of delicious and hearty courses follow, finishing with dessert of Tang Hulu, a candy fruit snack enjoyed at Chinese New Year as a symbol of happiness.
